Smoky Chorizo & Bean Cajun Rice

This was the first time we cooked this one and we’re never going back to normal camping rice! Man alive, it’s delicious!!! The smell alone is just next level. The secret is the Cajun seasoning - we’ve recently discovered Cape Herb Spice Rub’s Louisiana Cajun Seasoning (which you can get here on our Amazon affiliate link https://amzn.to/3yXoa8m) - just amazing! You really won’t be disappointed with our Smoky Chorizo & Bean Cajun Rice!


As always, any amounts in all of our recipes are approximate - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot! This one’s quite a quick first night one once you’ve got the fire going - we did with our Dutch oven and tripod, especially if you pre-chop everything before you go! Ingredients:

Chorizo sausage, skinned and sliced

Onion, chopped small

Celery, chopped small

Peppers, chopped small

Garlic, sliced

Easy cook rice

Red kidney beans, drained

Smoked paprika

Cajun Seasoning (we use this one: https://amzn.to/3yXoa8m - Amazon)

Chicken stock

Olive oil



Method:

  1. Warm some oil in your Dutch oven

  2. Add the sliced chorizo and cook until the oil starts to come out of the chorizo.

  3. Next in are the paprika and Cajun seasoning - stir and cook for a minute or two

  4. Then add the chopped vegetable and sliced garlic. Cook until softened and stirring so that they don’t stick.

  5. Stir through the rice until nicely coated and the add the stock until all the rice is covered and there is about an inch about the top of the rice.

  6. Stir through the kidney beans, put on the lid and leave to come to a gentle boil.

  7. Occasionally stir, making sure it’s not stuck to the bottom and top up with water if more is needed.

  8. It’s done when the liquid has gone ans the rice is cooked through.


It really is that simple! Should take about 20-25 minutes to cook so not too long for the scamps to wait. Honestly, ours wolfed this Smoky Chorizo & Bean Cajun Rice down!
