Smoky Chicken and Chorizo Cous Cous



A fusion of the flavours of Spain, but the vibe of Morocco - welcome to our Smoky Chicken and Chorizo Cous Cous. You know we love a one pot recipe and we've not let you down with this beauty!


As always, amounts in all of our recipes are approximate - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot!


Cook how suits you in the environment you are in - campfire, camping stove or oven. It will be delicious either way! We prefer the smokiness that open flames adds - boosting the paprika and chorizo notes even further.

Ingredients:

Chicken thighs, boneless and cut in half or quarters depending on how much cooking time you have

Chorizo, either sliced or we used packets of pre-cubed to make it even easier

Peppers, deseeded and chopped

Onion, chopped

Garlic, crushed

Tin of chickpeas, drained and rinsed

Tin of chopped tomatoes

Chicken stock

Cous cous, we used a cup measure

Paprika

Mild chilli powder

Dash of olive oil


Method:

  1. Heat a small amount of oil in your skillet until smoking. Not much - the chorizo will release oil!

  2. Add the chicken, stir and brown on both sides.

  3. Add the chorizo, stir and cook until the delicious orange oil is released.

  4. Add the onion, garlic and peppers. Stir until they soften.

  5. Add some paprika and mild chilli powder to taste.

  6. Stir through the tin of tomatoes and the chickpeas.

  7. Then add enough stock to cover the ingredients in the pan with a little bit extra. Cook for about 15 minutes or so until the chicken is cooked through. Top up the stock as needed (you need the liquid for the cous cous!)

  8. Turn off the heat, add the cous cous and stir through the liquid.

  9. Cover with a lid or tin foil until the cous cous absorbs most of the liquid.


Delicious as is, or with a dollop of hummus!
