Quick and Easy Camping Stove Pancetta, Mushroom and Pesto Pasta Recipe for Hungry Scamps!


Another firm favourite at Camping Scamping HQ. Super simple and quick, excellent for your first night meal after the tent has been put up, so you can feed the hungry scamps before you get chance to get the campfire going! As always, amounts in all of our recipes are approximate (we are in a field after all!) - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot!


Cook our Camping Stove Pancetta, Mushroom and Pesto Pasta how suits you in the environment you are in - campfire, camping stove or oven. It will be delicious either way! Camping stove for Camping Scamping on this one (and weekday dinner at home if we are being honest - we just can't resist it!)


Ingredients:

Onion, chopped

Garlic, crushed

Pancetta, cubed

Chestnut mushrooms, sliced

Large pasta to scoop up the sauce, we prefer conchiglie rigate.

Green pesto

Water

Olive oil

Cheese of your choice to serve



Method:

  1. Heat a small amount of olive oil in your skillet.

  2. Add the onions and garlic and stir until softened.

  3. Next, add the pancetta and cook until beginning to crisp.

  4. In go the mushrooms and stir until softened.

  5. Add your pasta and stir through the onion, garlic, pancetta and mushroom mixture.

  6. Add enough water to cover the pasta and leave to simmer.

  7. You may need to top up the water if it is evaporating too quickly. Sometimes we balance some foil over the skillet - leave a gap though so that it doesn't boil over.

  8. Timings will vary, but cooking the pasta in this way does take a little longer than the packet instructions.

  9. Once the majority of the water has evaporated and the pasta is cooked through, remove from the heat and stir through the pesto and sprinkle with cheese to serve.


You can speed this simple supper up even more by taking your veggies pre-chopped with you and kept in your cool box until you are ready.
