You know the drill now - no cooking times or amounts. We fully subscribe to the "each to their own" philosophy when it comes to appetites, fuel source, spicing, types of pans etc. Whatever you decide, however much you make, it will be just perfect for you and yours! For us, it is Dutch oven and flames for this one every time - we had a tripod issue this time, so ended up cooking directly next to the flames and set the fire next to the Dutch oven - we have named this the "barricade heat method"! Keep reading for all the details on how to make our Pulled Camping Beef Brisket...
Ingredients
Beef Brisket
Onion, halved
Garlic, halved
Celery, chopped
Fresh thyme
Bay leaves
Red wine
Beef stock
Olive oil
Butter
Salt and Pepper, to taste
Method:
Heat oil and butter until melted
Salt and pepper the outside of the beef and sear until browned. Remove from the Dutch oven.
Add the onions and garlic cut side down and the celery (these are going to help stop the meat sticking to the bottom of the pan.
Place the meat on top.
Add about half a bottle of wine and same again of beef stock.
Push in the thyme and bay leaves and bring to the boil.
Lid on and keep rotating if you are next to the flames like we were, or keep the flames low underneath.
Keep checking the fluid levels and top up as needed - treat yourself to a glass of the red - chef's rights!
Ours took about 4 hours, but all depends on the size of your brisket and the intensity of your fire. You want it to be pulling apart.
We served ours in a brioche bun, with jacket potatoes cooked in the embers (recipe for the potatoes here)
