Pesto Salmon Skillet and Giant Cous Cous


We love salmon at Camping Scamping HQ, we also love pesto and cous cous, so we we bring it all together in this dead simple, yet delicious Pesto Salmon Skillet and Giant Cous Cous.


As always, amounts in all of our recipes are approximate (we are in a field after all!) - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot!


Cook our Pesto Salmon Skillet and Giant Cous Cous how suits you in the environment you are in - campfire, camping stove, hob or oven. It will be delicious either way! Keep reading for the simple recipe....



Ingredients:

Salmon fillets

Green pesto

Giant cous cous

Sweetcorn

Chicken stock


Method:

  1. Heat a drizzle of olive oil in your skillet and gently toast the giant cous cous.

  2. Lay the salmon fillets on top.

  3. Add sweetcorn around the edges of the fillet (or any other veg you fancy).

  4. Smear the green pesto on top of the fillets.

  5. Add enough chicken stock to cover the cous cous and cover with foil.

  6. Steam until the cous cous and salmon are cooked through.

  7. Serve!
