Mediterranean Camping Cod


Pretty as a picture and super tasty, this quick camping fish dish is simple to make and will have the scamps asking for more! Equally at home on a camping stove, or over the flames (or frankly for a mid-week tea at home), keep reading for all the details on our Mediterranean Camping Cod!


You know the drill now - no cooking times or amounts. We fully subscribe to the "each to their own" philosophy when it comes to appetites, fuel source, types of pans etc. Whatever you decide, however much you make, will be just perfect for you and yours!



Ingredients:

Cod fillets, skin on but sliced into large sections

Onion, chopped

Garlic, crushed

Red, Yellow or Orange peppers, deseeded and cubed

Cherry tomatoes

Wild rice

Chicken stock

Baby spinach leaves

Basil, torn Olive oil

Pepper and salt, to taste


Method:

  1. Heat the olive oil in your skillet and sauté the onions until soft

  2. The add the chopped peppers and garlic, again cook until softened

  3. Next comes the wild rice, stir it through the vegetables, add stock until the rice is covered and cover with foil/lid and cook until the rice begins to soften.

  4. Remove the foil and add the cherry tomatoes, spinach and basil leaves, cook until the leaves are wilted.

  5. Place the cod pieces on top, cover with the foil again, add pepper and salt to your taste, and steam until the fish is cooked through (about 10 mins).

  6. Uncover and serve with a simple scattering of torn basil leaves
