Crispy Duck Camping Stove Stir Fry


The simplicity of this one means minimal prep, versatility regarding protein and veg choice and very happy campers, the cook included! As always - one pot tastic, minimal washing up but maximum flavours. Keep reading for our Crispy Duck Camping Stove Stir Fry.


As always, any amounts in all of our recipes are approximate - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot! Invariably we arrive at the camping site on a Friday after work, so we tend to do this one over the camping stove as a quick first night option whilst the tents are being put up and the scamps are running off steam.



Ingredients:

Duck breasts (with skin)

Spring onions, sliced

Mushrooms, sliced

Pak choi, quartered lengthways

Garlic puree

Ginger puree

Noodles, how ever you like - they can be ones that you just add to the pan to warm through, those you boil, those you place into boiled water and leave to soften. What ever floats your noodle boat!

Chinese five spice

Soy sauce

Sesame oil



Method:

  1. Into the skillet, place the duck breasts into hot sesame oil, non skin side down. Cook until crisping. Sprinkle the skin with chinese five spice and then turn skin down side and cook until really crispy and the fat has rendered. You might need to hold them down a bit as they try to curl. Remove from the pan and allow to rest.

  2. Add the spring onions to the meat juices in the skillet and cook until softened slightly.

  3. Add the mushrooms and, again stir until beginning to soften.

  4. Slice the duck breasts and add back to the pan, along with their juices. Keep stirring through the vegetables.

  5. Next, add the puréed garlic and ginger and stir through.

  6. Add the pak choi, stir and allow to wilt.

  7. Next in are the noodles and stir through the meat and vegetable mixture, making sure that they really get a good coating of the cooking juices.

  8. Finish with a dash of soy sauce
