Campfire salmon, asparagus and dill foils


What is better than one pot camping cooking? No pot camping cooking! Super easy, super delicious and super healthy campfire salmon, asparagus and dill foils will not disappoint!


Amounts in all of our recipes are approximate (we are in a field after all!) - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot!


Before you start you need a length of foil and baking parchment for each salmon fillet. How you cook them is your choice - equally delicious put directly onto hot embers, next to the flames and kept turning, on a camping or BBQ grill over the fire, placed into a skillet and onto a fire/embers, on a camping stove, or even in your oven at home. Ingredients:


For each foil:


A salmon fillet

Asparagus tips

Slice of lemon

Sprigs of dill

Crack of pepper


The accompanying carbohydrates are your choice, we decided to go with Morrocan cous cous we picked up at Costco at the beginning of the summer.


Method:


  1. Place your sheet of baking parchment on on top of the foil.

  2. Place a salmon fillet in the centre of the parchment.

  3. Place the asparagus tips around the salmon.

  4. Place a thin slice of lemon on top of the salmon and sprinkle with dill.

  5. Crack of pepper on top.

  6. Pull the foil up over the salmon fillet and fold over the top. Pinch and fold up the ends. Make sure there are no holes as you want the fish to steam in its own juice.

  7. Cook in your preferred way until the salmon is cooked through and the asparagus is cooked (but still has some bite).


It really is that simple. Camping dining really can be elegant with our campfire salmon, asparagus and dill foils.


And the best bit? No washing up!
