This is a true staple at Camping Scamping HQ, whether we're camping or not! Not quite one pot, but you could bring the chilli pre-prepared in your cool box and heat it up once you've cooked your rice. Does that count? Either way, a dead simple, dead tasty Campfire Chilli Con Carne will leave you happily content!
As always, amounts in all of our recipes are approximate (we are in a field after all!) - we are a family of four with healthy appetites and this does us fine. We avoid offering cooking times as it all depends on your fuel source and how intense the flames are - just double check that everything is cooked through and piping hot!

Ingredients
Pork mince
Onion, chopped
Garlic, crushed
Red pepper, deseeded and chopped
Tin of red kidney beans, drained and rinsed
Two tins of chopped tomatoes
Chilli powder, mild or hot depending on your taste
Smoked paprika
Olive oil
Glug of red wine
Easy cook rice
Water
Method:
Add a splash of olive oil to your skillet and heat until smoking.
Add the onions and sauté until softened.
Add the mince and stir until browned.
Deglaze the pan with a glug of red wine. (Drink the rest of the bottle whilst nattering with friends whilst you cook!)
Add the pepper, garlic, smoked paprika and chilli powder to your taste and stir.
Add the tinned tomatoes, fill one can with water and swill both cans with it and add to the pan.
Leave to simmer until the liquid has reduced.
Add the kidney beans and cook through.
For the rice, add enough water to the rice pan so that there is a thumb knuckle of water about the top of the rice. Cook slowly until the water has evaporated. Fluff up with a fork and serve with the Campfire Chilli Con Carne.
Serve with cheese and eat with gusto!!
