BBQ Beer Can Chicken

This is BBQ perfection! Moist, tender, flavoursome BBQ Beer Can Chicken chicken which falls off the bone. Historically you sat the chicken on a half-full can of beer and put it onto the BBQ, these days you can purchase a stand for it - lots of links at the bottom of the page that you can explore!


For this to work you need a BBQ that has a lid in order to keep in the smoke and heat so the bird cooks evenly. We've not tried it in a Dutch oven yet, but if you get one big enough, we reckon it could work with some coals on top of the lid.

Ingredients:

For the rub:

4 tbsp salt

3 tbsp brown sugar

2 tbsp paprika

1 tbsp cayenne pepper


(whatever you don't use will keep in an airtight container for up to 6 months)


For the bird:

Whole chicken

Lager/beer of your choice - we went for corona this time

Garlic gloves, pressed

Spring Onions, cut into long lengths

Lemon, chopped and squashed a bit

Any fresh herbs of your choice


Method:

  1. Rub the BBQ rub onto the chicken skin and allow it to sit at least one hour before smoking, however, you can do this overnight and leave it in the fridge/icebox - just be sure to bring the bird up to ambient temperature before putting on the BBQ

  2. Before inserting it into the base of the chicken, drink half the beer and add the rest to the container (or keep it in the can if you are doing it with the actual beer can!). Add the garlic, herbs, spring onions, and lemon to the container/beer can.

  3. Place the chicken onto the can and place it into the centre of the BBQ.

  4. You want the internal temperature of the thigh meat to reach about 76 degrees Celsius (depends on the size of the chicken and the heat of your BBQ, but takes us about 1 hour)

  5. Remove the chicken and allow it to rest with the can still in place for a good 15-20 minutes before removing from the can and serving.


We served our BBQ Beer Can Chicken with potatoes we roasted around the base of the chicken in the BBQ and our Homemade Red Cabbage and Apple Slaw, but it would be equally delicious with our Smashed, Roasted Garlic Jersey Royals or Dauphinoise Potato Foils and salad!
